Easy DIY Recipe: Passionfruit Sponge Cake

This Passionfruit Sponge Cake isn’t just a hit with the taste buds. Because it’s so straightforward to make, it’s exactly what you want when there’s a house full of Easter excitement. With its light sponge and tangy cream, it’ll disappear off the plate before you know it.

Ingredients:

  • Woolworths Double Unfilled Sponge 460g
  • 1 cup of thickened cream
  • ½ cup of passionfruit pulp (approximately 4-5 passionfruits OR 1 can Woolworths Passionfruit Pulp Canned 170g)
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Easter eggs – Cadbury Mini Eggs & other of your choice
  • Powdered sugar for dusting


Method:

Passionfruit Cream

1. Start preparing the passionfruit cream by whipping the thickened cream until soft peaks form.

2. Spread a generous amount of passionfruit cream on the sponge. Feel free to drizzle with some extra passionfruit pulp!

3. Gently fold the passionfruit mixture into the whipped cream until well combined.

4. Refrigerate the mixture until ready to use.

Assembly

1. (Optional) Start by taking the bottom layer of the sponge cake. Using a serrated knife, gently slice off the top rounded portion to create a flat, even surface. This will allow the passionfruit cream filling to sit evenly on this bottom sponge layer.

2. Place the bottom sponge layer on a serving plate or cake stand.

3. Spread a generous amount of passionfruit cream on the sponge. Feel free to drizzle with some extra passionfruit pulp!

4. Top with another layer of sponge cake, and repeat with the passionfruit cream, creating a smooth and even layer.
